Fresh Guacamole

I will never buy store-bought guacamole again!
In the past, I have bought store-bought but last night I made it from scratch as part of my January Recipes & it was fabulous. So fresh & flavorful that I just can’t imagine ever buying store-bought again…it would be a sin!

Ingredients: Ripe Avocados, Tomato, Lime, Salt, Jalapeno, White Onion, Cilantro, Garlic

This is how I spent my Saturday night: Fresh guacamole with tortilla chips & salsa (I got this amazing gourmet salsa at Williams-Sonoma for 50% off!) with a glass of wine & a movie with the husband! Perfect Saturday night 🙂
(Adapted from The Williams-Sonoma Cookbook)
  • 6 Tbsp finely chopped white onion
  • 1 jalapeno pepper (the recipe called for 2 but I chickened out!)
  • 1 clove garlic
  • 2 ripe avocados, halved, pitted, and peeled
  • 1 large, ripe tomato, finely chopped
  • 1/4 cup lightly packed fresh cilantro
  • 1 Tbsp fresh lime juice
  • Salt
Mash 4 Tbsp of the onion, the chile, and the garlic with a pestle or fork to form a coarse paste ♥ Add the avocados & mash until well incorporated ♥ Stir in all but 2 Tbsp of the tomato and all the cilantro & lime juice ♥ Season to taste with salt & let stand for a few minutes before serving ♥ Sprinkle guacamole with the remaining 2 Tbsp onion & tomato & serve with tortilla chips! ♥
P&C QUICK TIP: Use any leftover guacamole for an upcoming taco dinner. I intend on using mine to make fish tacos garnished with a dollop of guacamole on top. Divine!
