♥ Happy Valentine’s Day! (Part 2)

As promised, here are the recipes from tonight’s Valentine’s Day Dinner. Everything turned out exceptionally well except for the Molten Cakes. I tried to 1/2 the recipe & they just flopped 😦 If you decide to make them, let me know how they turn out for you. I guess I’ll have to go to Harbour 60 to get my fill 😉
All I have to say is all this Valentine’s Day cooking/baking was exhausting…thank goodness I still have time to unwind with my glass of wine.
Arugula & Tomatoes with Lemon Dressing

Ingredients: Baby Arugula (2 cups), S&P, 1/2 Lemon (Squeezed), Good Quality EVOO (1/4 cup), 8 Cherry Tomatoes (Quartered), Parmigiano Reggiano (if desired)
Combine lemon juice, EVOO & S&P with a whisk ♥ Toss arugula & tomatoes with dressing ♥ Dress the salad with shaved Parmesan on top (if desired) ♥ Plate & enjoy!

Penne à la Vodka with Smoked Salmon (Recipe courtesy of Liberty Grand)
(This recipe is extra special because it’s the same recipe that was used as our First Course meal at our wedding reception! The chef at Liberty Grand was gracious enough to share it with me because I loved it so much & wanted to have a recipe I could always make that reminded us of our *beautiful* day. This is my 2nd time making it 🙂 Yum!)

Ingredients: San Marzano Tomatoes (4 cans), Basil (2 Fresh Bunches), EVOO (50 ml), Onions (3 Medium), Garlic (5 cloves), Chili Flakes (1 Tsp), Salt (to taste), Vodka (65 ml), Cream (300 ml), High Quality Smoked Salmon (300 g), Penne Rigate (1 lb)
Rough chop the onions and fine dice the garlic ♥ Heat a large stock pot on medium heat and add olive oil ♥ Add onions, garlic and whole bunches of basil ♥ Cook on medium low heat for 25 to 40 minutes until onions become translucent ♥ Add some salt and chili flakes ♥ Drain cans of tomatoes and use the juice for another application.  Add tomatoes to pot and allow sauce to simmer for 2 to 4 hours, stirring frequently to avoid sauce sticking to bottom of pot. ♥ When sauce is done, blend with hand blender until it is sill chunky.  Do not over blend. ♥ Put vodka in another saucepan and heat until reduced by half.  The alcohol will burn off at this point. ♥ Add vodka and heavy cream to tomato sauce and whisk to incorporate. ♥ Cut smoked salmon into strips.  This is added to sauce when you put the pasta in before you serve. Toss cooked pasta, sauce and smoked salmon together and serve  ♥ Serves 4 to 6.  Enjoy!

Individual Chocolate Molten Cakes with Raspberries (Adapted from Ghirardelli Recipe)

Ingredients: Milk Chocolate (2 oz + 4 oz), Cake Flour (1/4 Cup), Vanilla Extract ( 1/2 Tsp), Unsalted Butter (1 Stick), 2 Whole Eggs, 2 Egg Yolks, Half and Half Cream (1/4 cup), Ramekins
To make centers, melt chocolate (2 oz) and cream in double boiler & whisk gently to blend ♥ Refrigerate about 2 hours or until firm ♥ Form into 6 balls & refrigerate until ready to use ♥ To make cake, heat oven to 400F & spray 6 ramekins with cooking spray ♥ Melt chocolate & butter in double boiler & whisk gently to blend ♥ With an electric mixer, whisk eggs, yolks, sugar and vanilla on high speed about 5 minutes or until thick & light ♥ Fold melted chocolate mixture & flour into egg mixture just until combined ♥ Spoon cake batter into ramekins & place a chocolate ball in the middle of each ramekin ♥ Bake about 15 minutes or until cake is firm to the touch ♥ Let it sit out of the oven for about 5 minutes before running a small knife around the inside of each ramekin ♥ Place a plate on top, invert and remove ramekin ♥ Garnish with raspberries & a dollop of whipped cream (Serves 6)
