I love grilled Branzino/Branzini, which my dad is a master at preparing. Unfortunately, we don’t have an outdoor grill so I decided to roast the sweet Mediterranean sea bass instead and it turned out wonderful! Branzino has a mild & buttery sweet flavour & a delicate texture and in my opinion, is the perfect light & healthy meal.
I visited my fishmonger on Saturday & luckily he had just brought in fresh Branzino from Greece so I had him prepare it for me. This is a really rustic type of recipe where you just toss together herbs and lemon and seasonings to garnish the fish and infuse it with just a bit more of added flavour so I haven’t added exact measurements – create it to your liking! This is also a very forgiving fish since it’s so moist so it’s hard not to get it just right!
- 1 Whole Branzino
- Lemons (I used Meyer Lemons), sliced thin
- Fresh Thyme Sprigs
- Fresh Parsley Sprigs
- 2 Cloves of Garlic, Minced
- White Wine
Preheat oven to 375 ♥ Place clean fish in roasting pan (on the rack) ♥ Sprinkle S&P and rub EVOO all over the fish & inside the cavity ♥ Stuff the cavity of the fish with garlic, thyme & parsley leaves & a few slices of lemon ♥ Top fish with remaining slices of lemon & some more thyme ♥ Pour a splash of white wine over the fish before placing in the oven ♥ Cook for 25-35 mins & let stand for 10 mins before serving ♥ Remove skin, debone and serve with fresh lemon slices!
QUICK TIP: This is a beautiful dish to serve when entertaining. Serve it with a great risotto or the traditional roasted potatoes with fennel & onions. Pair the meal with a crisp Italian white wine. Buon Appetito!
