Perfect Blueberry Muffins

In a perfect world I would wake up to beautiful peonies & sinfully indulgent almond croissants every single morning & feel zero guilt over it 😉  Unfortunately, I don’t live in Paris (but I can pretend).  But I guess from time to time I can have some luscious bakery style blueberry muffins, like the ones I made from Gwyneth’s cookbook (oh yes, yet again!)  I ♥ Ms. Paltrow & her fabulous cookbook ( I know I said this already 100 times but just wanted to make sure that my obsession was evident :))

These are definitely a Sunday morning type of indulgence & there’s nothing remotely healthy about these except for the antioxidants in the blueberries, otherwise it’s a sweet & buttery treat!  They are definitely worth serving as part of a fancy brunch or when you need to bring a sweet basket of goodies to a great friend or a new neighbour. The story behind this recipe is that Gwyneth’s mom made them all the time for her when she was pregnant 🙂 Love that!

♥ RECIPE (Adapted from My Father’s Daughter cookbook}
Ingredients: 8 Tbsps Unsalted Butter, melted & cooled ♥ 2 Organic Large Eggs ♥ 1/2 Cup Milk ♥ 2 Cups Unbleached All-Purpose Flour ♥ 3/4 Cup + 1 Tsp Granulated Sugar ♥ 2 Tsps Baking Powder ♥ 1/2 Tsp Fine Salt ♥ 2 1/2 Cups Fresh Blueberries
Directions: Preheat oven to 375°F.  Line 12-cup muffin tins with papers.
Whisk butter, eggs, and milk together in a bowl. In another bowl, whisk together the flour, the 3/4 cup sugar, baking powder and salt. Stir the wet ingredients into the dry ingredients and fold in blueberries. Divide among the muffin cups & sprinkle the muffins with the remaining teaspoon of sugar. Bake until a toothpick tests clean and the muffins are golden brown, 25-30 minutes. Best to eat these warm! Enjoy!
NOTE: I only made 1/2 batch & they turned out great! Just divide the above ingredients in 1/2 if you don’t want to be tempted by a dozen luscious muffins 😉
