Afternoon Pick Me Up: Cherry Almond Granola

♥ Happy Tuesday!
Among my other food obsessions, I also have a serious penchant for granola & honey drizzled over thick & creamy Greek yogourt- there’s nothing more satisfying on a really intense & busy day that helps me to refuel in a sinfully delicious yet healthy way!  In the midst of an overly lively workweek, where meeting deadlines, planning trips, tackling to do lists & simply staying afloat from all the craziness of a new summer week seem to take over, taking time to re-energize is vital!  
In a perfect world, fresh cut roses (or peonies ;)), homemade granola parfait & French Press coffee would be my everyday mid-afternoon piece of heaven. But on days when dreams don’t always come true, I’ll settle for a handful of my homemade Cherry Almond Granola {recipe to follow}.

{Yogourt Granola Parfait & French Press Coffee – Divine!}

♥ CHERRY ALMOND GRANOLA RECIPE
{Adapted from the Joy of Baking}
  • 3 Cups Old-Fashioned Rolled Oats
  • 3/4 Cup Sliced Marcona Almonds {Spanish Almonds}
  • 1/2 Cup Sunflower Seeds or Pumpkin Seeds
  • 1/2 Cup Flax Seeds
  • 1/2 Cup Pure Maple Syrup or Honey
  • 2 Tbsps Unsalted Butter {Melted}
  • 1 Cup Dried Fruit {I usually use Cherries but Apricots & Figs are divine as well!}
  • 1/4 Tsp  Salt
  • 1 Tbsp Ground Cinnamon
Preheat oven to 325°F & place rack in center of the oven.  Line a baking sheet with parchment paper.
In a large bowl combine the rolled oats, nuts, seeds, ground cinnamon & salt.  In a small bowl stir together the melted butter & maple syrup/honey.  Pour this mixture over the dry ingredients & toss together, making sure all the dry ingredients are coated.  Spread onto the prepared baking sheet & bake for 30-35 mins or until golden brown (make sure it doesn’t burn!), stirring occasionally.  Place on a wire rack to cool.  Once granola has cooled, toss in the dried fruit & store in an airtight container in the refrigerator {it will keep for several weeks, if it lasts that long ;)}
P&C QUICK TIP: Another great recipe that I often make is Ina Garten’s (Barefoot Contessa) Homemade Granola Bars – they are amazing! My tip is when you make them & after they have cooled, cut parchment paper into squares & stack the granola bars in a container lined with the parchment paper in between each square. If you want to get really creative & if you are giving them as a gift, use Martha Stewart’s doily-lace scallop-edge punch on the parchment & you take the presentation up a *pretty* notch {love is always in the details}!
These bars are a great gift to give a new mom or for your favorite niece/nephew etc.!
