Monday Recipe Inspiration: Olive Oil & Maple Granola

Happy Monday!

It’s a new week and therefore a perfect reason to get back to healthy habits {I know I need to after my indulgent weekend!}. I hope you’ve been treating yourself amazing in this new year and if not, there’s always time to start now 😉
It’s no surprise that I love greek yogourt and especially love homemade granola, so here’s another recipe {remember: Cherry Almond Granola}, which you can easily adjust to your own taste preference or based on what you have in your pantry {that’s the beauty of making granola!}. This is a great sweet and salty healthy treat and such an amazing way to fill up on great ingredients that have staying power to keep you full and energized, so you can easily conquer this last week in January!

1 1/2 cups old-fashioned rolled oats
1 cup unsweetened coconut flakes {If you use sweetened coconut, simply reduce the sugar}
1 1/2 cups raw almonds, left whole or coarsely chopped
1/3 cup pure maple syrup
1/4 cup extra-virgin olive oil
1/4 cup packed light-brown sugar
Coarse sea salt
Combine all the ingredients in a mixing bowl with 1/2 tsp salt and mix well * Spread granola mixture on a rimmed baking sheet * Bake in a 300°F oven for 45 minutes or until golden and crunchy, mixing every 15 minutes to prevent over sticking * Sprinkle a bit extra sea salt {if desired} * Let granola mixture cool and then store in an airtight container for up to 1 month * For an extra hint of sweetness, you can also mix in dark chocolate chips, once the mixture has cooled completely {as per my hubby’s request!}
*Makes about 4 cups
