Recipe & Skin Beauty Inspiration: Salmon with Sun-dried Tomato Pesto & Feta

There’s no denying that winter wreaks havoc on your skin by making it extra dry. Aside from slathering on really great moisturizer, adding a humidifier to your space and drinking a lot of water, you can also add “skin food,” such as salmon to your diet, which is said to have the perfect dose of fatty acids to make your skin glow from the inside out!
Luckily, I am a big fan of salmon. Here’s one of my favourite Mediterranean-inspired ways to dress up a salmon fillet!
Ingredients: Prepared Pesto {I used 4 Nuts & Cheese Maison Le Grand – my absolute favourite pesto brand!} * 3-5 Sun-dried Tomatoes {If you are using sun-dried tomatoes in oil, you can scale back on the amount of extra oil you put in} * 1 3-5 oz Salmon Fillet {preferably organic}* Lemon Juice {from 1/2 a lemon} * EVOO * S&P
Directions: Prepare your pesto by mixing 1/3 cup pesto with 3-5 sun-dried tomatoes and 1 Tbsp of EVOO in your food processor, until it reaches your desired consistency {you can add more EVOO to make it more pasty or less if you like it chunky} * Season your fillet with S&P and EVOO * Top the fillet with the prepared pesto and pack it down so it nicely coats the fillet * Add a bit of lemon juice over top * Bake it at 375°F for 15-25 mins {depending on the thickness of your salmon} on a baking sheet * In the last 5 minutes of baking, top the fillet with crumbled feta and let it finish baking in the oven until it’s melted and lightly browned *Makes 1 serving
Note: You can buy ready-made sun-dried tomato pesto and avoid using a food processor to blend together the pesto and sun-dried tomatoes. Also, this would make a fabulous pasta sauce, finished off with crumbled feta instead of Parmiggiano-Reggiano!
